Fish Recipe

Fish Soup Delight 

Ingredients:

100g unshelled prawns

1 large leek

1 large onion

1 carrot

2 tablespoons olive oil

2 cloves of garlic

400g can tomatoes

150ml of white wine

1.25 litres of fish stock

Chervil and saffron

12-18 mussels

225g cod fillets

1 tablespoon potato flour

Chopped parsley

Garlic flavoured mayonnaise

Cooking: 45 minutes (approximately)

The Fish Soup Delight can be serviced as a lunch dish, but probably better suited to an evening meal.

The Fish Soup Delight can be serviced as a lunch dish, but probably better suited to an evening meal, either way accompanied by a good quality white wine. Baitbox uses estuary cod, but you could use any type of cod, or maybe a similar white, oily fish species to achieve the same flavour quality.

You can make your own stock, but it is a lot easier these days to just buy it ready made.

Steps:

1. Shell the prawns and reserve the shells. Peel the onion and carrot. Chop the vegetables finely and fry gently in the oil in a large pan until soft. Add the prawn shells. Crush the garlic with a little salt, add to the pan and cook for a further 4-5 minutes. Add the tomatoes and wine and simmer gently for 20 minutes.

2. Add the prepared fish stock, the chervil and a pinch of saffron. Add plenty of seasoning. Bring to the boil and cook for 10 minutes.

3. Pass the soup through a mouli, or liquidiser and strain into a clean pan. Scrub the mussels and put in a clean pan. Cover with lid and cook over a high heat for 4-5 minutes until their shells open. Remove the mussels from their shells and mix with the prawns. Skin the cod fillets and cut into small cubes. Add to the prawns and mussels.

4. Strain the mussel liquor into the soup. Season and bring to the boil. Mix the potato flour with a little cold water to a smooth paste, and add it gradually to the boiling soup until it reaches the desired consistency.

5. Five minutes before serving, add the prawns, mussels and cod. Simmer gently. Serve the soup piping hot, sprinkled with chopped parsley, accompanied with a bowl of garlic-flavoured mayonnaise.
